Fennel Salad

For dressing:
  • 2 tablespoons fresh orange juice
  • 2 tablespoons Sherry vinegar or red-wine vinegar
  • salt
  • 3 tablespoons olive oil

The salad:

large fennel bulb - sliced

large oranges

large grapefruit

almonds or Cashews sliced



other optons -

1 small bunch of fresh mint leaves

apple slice

red onion
